At HotBox we use a combination of kiln-dried Hickory and Oak in our 1-tonne Rotisserie Smoker. The meat is dry-rubbed and cooked low and slow(ly) to create tender, succulent cuts that melt in the mouth. Be careful though, there's plenty of spice to get those taste buds fired up!

Our culinary journey started as nomadic traders in the vibrant street food scene of East London. With residencies at Street Feast's Dalston Yard, Battersea Park, Dinerama, Hawker House and Lewisham's Model Market.
